Should I roast my own chicken?

Short Answer: YES!!!

Long Answer: YES! YES! YES!

I love to roast the chicken a day or two beforehand. This makes it much easier on the day of preparing this dish. It also allows you to make your own broth for the soup. Homemade broth is super simple, and will take your soups/stews over the top!

Below is a recipe for homemade chicken broth. Why not make your own broth after roasting your chicken?? 🙂

Essentially, you will place the leftover chicken bones in a large pot, along with various vegetables, herbs and spices. Then cover with water, bring to a boil, and reduce to a simmer for 3-4 hours. That’s it! 

You can skim the fat off of the top after straining if you would like, but it’s not completely necessary. This will give you a clearer broth.

What about making my own dumplings?

The difference between homemade dumpling dough and the boxed mix is night and day! The extra five minutes of gettin’ your hands dirty will make you come back to this recipe again and again.

What’s great is that you most likely have all of the ingredients hanging around the kitchen already! All it takes is all-purpose flour, butter, milk, baking powder, salt, and sugar.  

Is It Healthy?

Is this a meal you should eat every day when trying to lose weight? Probably not.

Can you eat this dish 2-3 times a month and not worry about gaining weight? Absolutely! 

By making everything yourself, including the dumplings, roasted chicken, and broth, you can control the sodium levels. Most chicken and dumpling recipes are extremely high in sodium. 

Why is a high sodium diet bad? A daily diet over the RDA for sodium may lead to increased blood pressure, overall inflammation, as well as an increased chance of heart disease and stroke. 

Long story short: If you prepare your own ingredients, they will always be healthier. It will make your meals taste SO MUCH better as well! Remember, if you think you don’t have the time, you can always prepare elements of a meal a day or two in advance. 🙂

Ingredients
  

Soup

  • 1 lb Roasted Chicken Cooked and diced
  • 1 tbsp Unsalted Butter
  • 1 tbsp Extra Virgin Olive Oil
  • 2 Carrots large; diced
  • 1 Yellow Onion diced
  • 3 stalks Celery diced
  • 1/4 cup All-Purpose Flour
  • 4 Cups Chicken Broth low-sodium
  • 1/2 cup Milk I used Almond Milk
  • 1 tsp Dried Thyme
  • 1/2 tsp Ground Sage
  • 1/2 tsp Baking Powder

Dumplings

  • 1 cup All-Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp White Sugar
  • 1/2 tsp Sea Salt
  • 3 tbsp Unsalted Butter
  • 1/2 cup Milk I used Almond Milk

Instructions
 

Dumplings

  • To make your own "Biscuit Baking Mix", start by combining all dried ingredients in a large bowl. Whisk to combine.
  • Dice butter into small cubes, then cut into dough. *Refer to blog post on how to cut butter into dough.*
  • Once mixture has become crumbly in texture, combine with milk until just incorporated. It should be scoopable with a spoon at this point. Set aside until ready for use.

Soup

  • Melt butter in a large pot over medium heat. Add onion, carrots, and celery, then cook until softened, about 5 minutes.
  • Add flour and stir for 1 minute. Then add broth and stir well, scraping up what's stuck on the bottom. Bring to a boil.
  • Lower heat to a simmer, then add chicken, milk, thyme, sage, and baking powder. Stir well, seasoning to taste with salt and pepper.
  • Add generous tablespoonfuls of the dumpling mix to the top of the simmering chicken mixture.
  • Cover the pot and cook over low heat for 20 to 25 minutes (without lifting the lid), until the dumplings are cooked through. You will need to take one out to try. Enjoy!
